We're always "mixing it up" for this audience with diverse topics of the day and new this year, ECHO AfterDark has partnered with local restaurant Pistou to produce three Pop-Up Gastronomy evenings that will explore summer cooking and the wine of Southern France.
“Pop Up” Gastronomy is a popular wave that is rolling through cities where local restaurants "pop up" and serve guests in a non-traditional setting. Burlington's version will take place at ECHO on the evenings of July 23, August 6, and August 20.
ECHO AfterDark and James Beard Award nominee Chef Max Mackinnon of Burlington’s Pistou will present dinners that celebrate the warm weather regions of Provence, Rhône Valley, and Northern Basque country. Max will guide guests through the scents and tastes of these famous culinary regions while sitting lakeside on ECHO’s beautiful Dealer.com Terrace.
July 23: Sunny Provence with its warm, dry environment and proximity to the Mediterranean features a cuisine heavy on seafood, olive oil, garlic, summer vegetables, and fresh fruit. Grilled fish, fresh vegetables, seafood stews, and famous sauces such as aïoli and tapenade will tempt diner’s palettes this evening. Don’t forget the eponymous soupe au pistou! Wines of the three Provençal appellations will augment the refreshing courses. This evening will feature an optional raw bar available one hour before dinner.
Hewing closely to Chef Max Mackinnon and Pistou’s philosophy of freshness and seasonality, the exact menu will be designed within days of the event for maximum quality and impact. Pistou, located on Main Street in Burlington offers seasonal French cuisine paired with carefully selected wines designed to evoke terroir and sense of place.
Only 60 tickets are available for each evening and can be reserved by calling Pistou during business hours at 802-540-1783. Dinner is prix fixe at $55 for ECHO members and $60 for all others. Wines, especially chosen for the event will be available at $6 per glass.
