will welcome ECHO guests and waterfront visitors. Here
they will find delicious local food, surrounded by
living rain gardens, all within steps of beautiful Lake
Champlain.Dine and discover in this unique outdoor
café where learning about living green, making smart
food choices, and cleaning up our waterways is as
important as exceptional food quality and spectacular
Lake and mountain views. Whether having a grab and go
business lunch, a catered evening event, or serving
student snacks, the nutritional and ecological café
experience will have something for everyone.
Imagine…lunching Lakeside while exploring how rain
gardens work, composting, reusing, recycling, and
learning how you can create a sustainable home,
neighborhood, and community. ECHO’s goal is to bring the
original sustainable Think! Cafe’ approach to daily
decision making beyond our doors to the waterfront
